Gratitude, thankfulness, gratefulness, or appreciation is a beautiful and powerful tool. Being grateful for the little things in our day can have a profound effecton the way we look at the big picture. When we focus on the things that make us truly happy in the now, an overall sense of wellbeing takes over us.

Chocolate-Almond Banana Pancakes (Gluten/dairy/sugar free!)

1 1/4 cup almond meal

2 eggs

1 tsp baking soda

2-3 tbl cacao powder

1/4 cup almond or coconut milk

1 banana, ripe

1 tbl honey, OR 1/3 cup raisins

dash of cinnamon

 

Mash up the banana into the almond meal with a fork. Then fold in the eggs, cacao powder, and baking soda, adding a splash of almond milk. Add cinnamon, raisins and honey as desired!

I like to fry these in a mixture of ghee (clarified/dairy-free butter) and coconut oil. Coconut oil in particular makes them fluffy and awesome! These can easily be made vegan, with a ground flaxseed-based egg, and with raisins instead of honey. Top with maple syrup, of course, and enjoy! You won’t even notice they’re gluten/dairy/sugar free 😉

Yields 9 small pancakes (3-4 inch in diameter).
